In a study involving Type I Diabetics....after just 3 weeks on a whole foods, plant based diet, high in both carbohydrate and fiber, they were able to lower their insulin dosage by 40%, and their cholesterol dropped by 30%. This is extremely important because there is no cure for type 1 diabetes yet, but if they can lower cholesterol and insulin requirements, they can avoid a lot of complications such as retinopathy, stroke and coronary artery disease.
